RZA Burger

I’ve discovered one of my favorite new foods. I recently started getting into the music of the Wu-Tang Clan and its members (many of whom are vegetarians), and when reading up on one of their albums I stumbled upon an interview in which the RZA describes one of his signature dishes..

“A RZA burger is a veggie patty with a fried egg, cheese, lettuce, pickles and all that, smashed between two delicious waffles. Spread mustard and mayo on it with a little butter and put that shit together. Trust me, son, that shit needs to be in stores.”

As soon as I read that I knew I had to make one. I sat on the idea for a while, but finally whipped up my own version: two buttermilk waffles, a portabello garden-burger, fried egg, american cheese, some caramelized onions, and to top it all off, a leftover chile relleño from Chevy’s. I poured a glass of cold water, turned up 36 Chambers, snapped a few photos, and dug into one of the most intensely satisfying meals I can remember. Every flavor came through in perfect balance; sweetness from the waffles combined with umami from the mushroom and egg, slight saltiness from the cheese, and just the right amount of heat from the poblano pepper. Delicious.

  7. It looks like it would be OK, but what makes something loaded into something nice is that there is the right amount of it. Too much and you are just sick of it. I would go for it, I bet you wouldn’t miss the meat.

    I made some after I read this. I used morningstar veggie patties, egg, eggo waffles, onion, pickles and some spring mix. OH MAN was it good!

  10. I read this last night. I made my own version of it this morning. gardenburger, smoked gouda, redpepper aioli,sauteed mushrooms, over easy egg. It was one of the best experiences I’ve had all day. I am going to get up out my chair and make one for my sous chef who just got into work. Serious. If you can’t get into this you have no idea what yr missing.

    • That sounds great! Smoked gouda is probably my favorite cheese, and anything with sauteed mushrooms is a winner in my book. I’m glad you enjoyed it.

      By the way, I checked out your restaurant’s website and it looks really good. If I’m ever in Utah I’ll have to check it out.

    • Make one then!!!! Or, if you’re going to be in Ewing anytime soon, I can make one for you.

      Since posting this I also made a waffle with scrambled eggs and chipotle hot sauce, and that was pretty good too, with less ingredients involved.

      Also, I heard mad stories from Polly and Darin about your town and it sounds like quite an interesting place!
